WHAT IS GOOD PASTA


• Check for the words 100% DURUM SEMOLINA. This pasta is the highest quality and most durable.

• Watch for pasta made with Semolina as an ingredient. This means that the pasta is a lower quality pasta made with Durum

• Semolina mixed with lower grade flours. This type of pasta will not hold up as well when cooked.

• Look for cracks (“checking”) and broken pieces. Dry pasta with cracks will break apart when cooked.

• Look for a fine white powder coating the dry pasta. This could be a sign of temperature abuse, which will make the pasta more brittle.

• When cooking, watch for excessive foaming in the pot. This usually means that the pasta is made with a combination of lower grade flours and starches.

• When cooking, watch the cloudiness in the water. Excessive cloudiness usually means lower grade pastas made with added starches.
