CHILLING PASTA FOR LATER USE

• Cook the pasta until it is slightly under-cooked.

• Immediately immerse pasta in cold water after draining.

• Add a small amount of vegetable oil and gently toss.

• Cover and refrigerate immediately.

• Keep refrigerated no more than 48 hours.

• Re-heat pasta by dropping in boiling water for 1 minute or less

• Drain slightly.

• Quickly add pasta to a warm sauce in a saute pan over medium heat for 1 minute or less.
