CHILLING PASTA FOR LATER USE
Cook the pasta until it is slightly under-cooked.
Immediately immerse pasta in cold water after draining.
Add a small amount of vegetable oil and gently toss.
Cover and refrigerate immediately.
Keep refrigerated no more than 48 hours.
Re-heat pasta by dropping in boiling water for 1 minute or less
Drain slightly.
Quickly add pasta to a warm sauce in a saute pan over medium heat for
1 minute or less.
